  • 1/2 cup Unsalted butter (1 stick), softened
  • 1/2 cup Brown sugar packed
  • 1/2 cup Molasses
  • 2 Large eggs
  • 1/2 cup Hot water

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it, or lining with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt, then set this dry mixture aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until the mixture becomes light and fluffy.
  4. Beat in the molasses, then add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the hot water; begin and end with the dry ingredients, mixing only until just combined.
  6. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Allow to cool before serving.

Notes

Serve this gingerbread cake warm with a dollop of whipped cream or a dusting of powdered sugar for an extra special treat. It also pairs wonderfully with a cup of coffee or tea.
