Preparation
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
- Add the diced carrots and celery, and cook for another 5 minutes.
Cooking
- Stir in the chopped cabbage and cook until it starts to wilt.
- Add the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20-30 minutes, until all the vegetables are tender.
- Taste and adjust seasonings if necessary. Serve warm.
Notes
Serve warm in bowls with a sprinkle of fresh herbs or a dollop of sour cream on top. Pairs well with whole-grain bread or a side salad. Can add red pepper flakes for heat or other vegetables like zucchini or bell peppers.
