Ingredients
  

Vegetable Ingredients
  • 1 medium head cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 stalks celery, diced
Base Ingredients
  • 1 can diced tomatoes (14.5 ounces)
  • 6 cups vegetable broth
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 2 tablespoons olive oil For sautéing

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Add the diced carrots and celery, and cook for another 5 minutes.
Cooking
  1. Stir in the chopped cabbage and cook until it starts to wilt.
  2. Add the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for about 20-30 minutes, until all the vegetables are tender.
  4. Taste and adjust seasonings if necessary. Serve warm.

Notes

Serve warm in bowls with a sprinkle of fresh herbs or a dollop of sour cream on top. Pairs well with whole-grain bread or a side salad. Can add red pepper flakes for heat or other vegetables like zucchini or bell peppers.
