Preparation
- In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth.
- Add key lime juice and vanilla extract, and mix until well combined.
- Gently fold in the whipped cream until incorporated.
Assembly
- In mini dessert cups or jars, layer graham cracker crumbs at the bottom, followed by the cheesecake mixture.
- Top with additional graham cracker crumbs and a slice of lime for garnish.
Chilling
- Refrigerate for at least 2 hours before serving.
Notes
Store leftovers in the refrigerator covered with plastic wrap for up to 3 days. You can adjust the amount of key lime juice for desired tanginess.
