  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchini, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • 1/2 cup shredded cheese (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
  3. Add ground turkey to the skillet and cook until browned.
  4. Stir in sweet potatoes and zucchini, seasoning with paprika, salt, black pepper, and cayenne pepper.
  5. Pour in the chicken broth and stir until everything is well combined.
  6. Transfer the mixture into a baking dish. If using, sprinkle cheese on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the sweet potatoes are tender.
  2. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for 2-3 months. You can also customize with different vegetables or protein options.
