  • 2 tablespoons White Miso Paste
  • 1 tablespoon Mirin
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Rice Vinegar
  • 0.5 teaspoon Sugar optional, for sweetness
  • 1 teaspoon Sesame Oil for finishing
  • 1 tablespoon Water
  • 1 Green Onions for garnish, sliced

Equipment

  • Skillet
  • Whisk
  • Mixing Bowl
  • Tongs or Spatula

Method

Preparation
  1. Wash and trim the radishes, then halve or quarter any larger ones for even cooking.
  2. In a small bowl, whisk together the miso paste, mirin, soy sauce, rice vinegar, optional sugar, and water until a smooth glaze forms.
Cooking
  1. Heat a skillet over medium heat, add the prepared radishes, and cook for about 5 minutes until they begin to soften slightly.
  2. Pour the prepared miso glaze over the radishes, ensuring they are evenly coated.
  3. Continue cooking for 5-7 minutes, stirring occasionally, until the glaze thickens and beautifully coats each radish.
Serving
  1. Remove the skillet from the heat, drizzle with sesame oil, and garnish generously with sliced green onions before serving warm.

Notes

For extra depth of flavor, consider roasting the glazed radishes in the oven for a few minutes until slightly caramelized. Adjust the amount of sugar in the glaze to suit your sweetness preference.
