Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper, sauté until soft.
  3. Stir in the garlic and cook for another minute.
  4. Add the ground turkey, cooking until browned and cooked through.
  5. Mix in the sweet potatoes, black beans, corn, cumin, and chili powder.
  6. Cover and cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. Season with salt and pepper to taste.
Serving
  1. Serve in bowls, garnished with fresh cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stove. For added spice, consider jalapeños or hot sauce. This dish can be customized with various toppings.
