  • 2 cups Cooked chicken, shredded
  • 1 can Black beans, rinsed and drained 15 oz
  • 1.5 cups Corn kernels, drained 1 can (15 oz) or frozen
  • 1 can Diced tomatoes with green chilies, undrained 10 oz
  • 1 can Cream of chicken soup 10.5 oz
  • 0.5 cup Milk
  • 1 packet Taco seasoning 1 oz
  • 2 cups Tortilla chips, crushed
  • 1.5 cups Cheddar cheese, shredded

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, cream of chicken soup, milk, and taco seasoning. Mix well until all ingredients are thoroughly combined.
Baking
  1. Spread the chicken mixture evenly into the prepared baking dish.
  2. Sprinkle the crushed tortilla chips over the top of the mixture, followed by the shredded cheddar cheese. Ensure an even layer of cheese covers the casserole.
  3. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
Serving
  1. Remove the casserole from the oven and let it stand for 5 minutes before serving to allow it to set slightly.

Notes

Garnish with fresh cilantro and a dollop of sour cream or Greek yogurt for extra flavor.
