Preparation
- Preheat your oven to 400°F (200°C).
- Place the cleaned mackerel on a baking sheet lined with parchment paper.
- In a small bowl, mix the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Pour the mixture over the mackerel, making sure to cover both sides.
- Place lemon slices inside the fish and on top.
Baking
- Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once done, remove from the oven and sprinkle with fresh parsley.
Notes
For storage, let leftovers cool completely and store in an airtight container in the fridge for up to 2 days. Reheat gently in the oven or microwave. You can add olives or tomatoes for extra flavor, or stuff the fish with fresh herbs like dill or thyme for variation.
