  • 2 pieces mackerel fish, cleaned and gutted Use fresh fish for best flavor.
  • 2 tablespoons olive oil Can substitute with other oils.
  • 2 pieces lemons (one for juice and one for slices) Adjust amount based on taste preference.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Add more herbs for stronger flavor.
  • Salt and pepper to taste Adjust according to preference.
  • 1 handful fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the cleaned mackerel on a baking sheet lined with parchment paper.
  3. In a small bowl, mix the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  4. Pour the mixture over the mackerel, making sure to cover both sides.
  5. Place lemon slices inside the fish and on top.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  2. Once done, remove from the oven and sprinkle with fresh parsley.

Notes

For storage, let leftovers cool completely and store in an airtight container in the fridge for up to 2 days. Reheat gently in the oven or microwave. You can add olives or tomatoes for extra flavor, or stuff the fish with fresh herbs like dill or thyme for variation.
