Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
For the Bowl
  • 1 cup rice Any type of rice can be used.
  • 1 piece avocado, sliced
  • 1 cup fresh vegetables (e.g., bell peppers, cucumbers, carrots) Feel free to use any vegetables you like.

Method
 

Marinating the Chicken
  1. In a bowl, mix the olive oil, soy sauce, lime juice, salt, and pepper.
  2. Add the chicken breasts to the marinade and marinate for at least 30 minutes.
Cooking the Rice and Chicken
  1. Cook the rice according to package instructions.
  2. Grill or pan-cook the marinated chicken until fully cooked.
Serving the Dish
  1. Slice the chicken into pieces.
  2. Serve the chicken over the cooked rice, topped with sliced avocado and fresh vegetables.
  3. Optionally, add extra lime juice or soy sauce for more flavor.

Notes

For the best presentation, arrange the ingredients nicely on the plate. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Keep vegetables separate until ready to serve.
