  • 2 large Sweet Potatoes
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
Topping
  • 1/2 cup Black Beans canned, rinsed, drained
  • 1/2 cup Corn frozen or canned, drained
  • 1/2 Avocado diced
  • 1/4 cup Red Onion finely diced
  • 2 tbsp Cilantro chopped
  • 1 tbsp Lime Juice
  • 2 tbsp Greek Yogurt/Sour Cream for topping

Method
 

Instructions
  1. Preheat oven to 400°F (200°C); wash and prick sweet potatoes.
  2. Rub potatoes with oil, salt, and pepper, then roast on a baking sheet for 40-50 minutes until tender.
  3. While potatoes roast, mix black beans, corn, avocado, red onion, cilantro, and lime juice for the topping.
  4. Slice roasted potatoes lengthwise, fluff the flesh, and spoon the prepared topping mixture into each.
  5. Garnish with Greek yogurt or sour cream and serve hot.

Notes

For extra crispiness, broil the sweet potatoes for a few minutes at the end, watching carefully to prevent burning.
