Preparation
- Combine wet ingredients (eggs, sugar, oil, lemon zest) in a bowl, then stir in shredded zucchini. In another bowl, whisk together dry ingredients (flour, baking powder, baking soda, salt). Gradually add dry to wet ingredients, mixing until just combined.
- Pour batter into a greased 9x13 inch baking pan and bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- Whisk powdered sugar and lemon juice until smooth.
- Drizzle the lemon glaze evenly over the cooled bars. Allow glaze to set before cutting into squares and serving.
Notes
Ensure zucchini is well-drained after shredding to prevent a watery batter. For extra flavor, add a pinch of cinnamon to the bar batter.
