Ingredients
  

For the Bars
  • 2 cups shredded zucchini
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
For the Lemon Glaze
  • 1 1/2 cups powdered sugar
  • 3 tablespoons fresh lemon juice

Method
 

Preparation
  1. Combine wet ingredients (eggs, sugar, oil, lemon zest) in a bowl, then stir in shredded zucchini. In another bowl, whisk together dry ingredients (flour, baking powder, baking soda, salt). Gradually add dry to wet ingredients, mixing until just combined.
  2. Pour batter into a greased 9x13 inch baking pan and bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  3. Whisk powdered sugar and lemon juice until smooth.
  4. Drizzle the lemon glaze evenly over the cooled bars. Allow glaze to set before cutting into squares and serving.

Notes

Ensure zucchini is well-drained after shredding to prevent a watery batter. For extra flavor, add a pinch of cinnamon to the bar batter.
