Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix lemon juice, minced garlic, olive oil, salt, and pepper. Marinate the chicken breasts in the mixture for at least 30 minutes.
- Cook the rice in chicken broth or water according to package instructions.
Cooking
- While the rice is cooking, place the sweet potato cubes on a baking sheet, drizzle with olive oil, salt, and pepper, and roast in the oven for about 25-30 minutes, or until tender.
- In a skillet over medium heat, cook the marinated chicken for about 6-7 minutes on each side until cooked through.
- Serve the chicken over a bed of rice and sweet potatoes, garnished with fresh parsley.
Notes
For more flavor, marinate the chicken longer, even overnight if possible. You can mix vegetables like broccoli or asparagus for added nutrition and color. Store leftovers in an airtight container for up to 3 days, reheat in the microwave or on the stove.
