- In a mixing bowl, combine lemon zest, cream cheese, powdered sugar, vanilla cookie crumbs, melted white chocolate, lemon juice, and salt.
- Mix until well combined.
- Refrigerate the mixture for about 30 minutes to firm up.
- Once chilled, scoop out small portions and roll into balls.
- Roll the truffles in powdered sugar to coat.
- Place on a baking sheet lined with parchment paper and refrigerate until set.
Notes
Best served chilled. Garnish with lemon slices or mint leaves for an added touch. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage, placing parchment paper between layers.
