  • 1 lb breakfast sausage
  • 1 cup shredded cheese cheddar or mozzarella
  • 1/2 cup heavy cream
  • 1/2 cup diced bell peppers optional
  • 1/2 cup diced onions optional
  • salt
  • pepper
  • chopped green onions for garnish, optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess fat.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  4. Stir in the cooked sausage, shredded cheese, diced bell peppers, and onions.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25–30 minutes, or until the eggs are set and the top is golden brown.
  7. Garnish with chopped green onions if desired and serve warm.

Notes

For extra flavor, add garlic powder, paprika, or Italian seasoning. You can substitute the sausage with turkey sausage. For a vegetarian version, replace sausage with spinach, mushrooms, or zucchini. If you prefer a softer texture, reduce baking time slightly.
