  • 1 lb ground turkey
  • 1 cup cauliflower rice
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups spinach
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can (14.5 oz) diced tomatoes Drain excess liquid to prevent sogginess
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and peppers, and sauté until soft.
  3. Add ground turkey to the pan, cooking until browned.
  4. Stir in garlic powder, onion powder, diced tomatoes, cauliflower rice, and spinach. Cook for about 5 minutes until spinach wilts.
  5. Season with salt and pepper.
Baking
  1. Transfer the mixture to a casserole dish and top with shredded cheese.
  2. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
Serving
  1. Serve warm and enjoy! It's great on its own or paired with a simple salad or low-carb bread.

Notes

Use fresh vegetables for the best flavor and texture. For added heat, include red pepper flakes. Experiment with different cheeses or vegetables based on preferences.
