Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch casserole dish.
- Season chicken thighs with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken thighs for 3-4 minutes per side until browned; set aside.
Casserole Assembly
- In the same skillet, add mushrooms and cook until softened, then add minced garlic and cook for another minute until fragrant.
- Stir in heavy cream, cream cheese, and chicken broth, whisking until the cream cheese is fully melted and the sauce is smooth.
- Add spinach, if using, and cook until wilted, then return the seared chicken to the skillet, coating it in the sauce.
- Transfer the chicken and sauce mixture to the prepared casserole dish and sprinkle with shredded mozzarella cheese.
- Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
Notes
Serve this comforting casserole hot as a standalone meal or with a side of steamed green beans or a simple salad. For an extra kick, add a pinch of red pepper flakes to the sauce.
