  • 8 oz cremini mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 0.5 cup chicken broth
  • 2 cups fresh spinach optional
  • 0.5 cup shredded mozzarella cheese for topping
  • 1 tbsp olive oil
  • salt and black pepper to taste
  • 1 tsp dried Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch casserole dish.
  2. Season chicken thighs with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat and sear the chicken thighs for 3-4 minutes per side until browned; set aside.
Casserole Assembly
  1. In the same skillet, add mushrooms and cook until softened, then add minced garlic and cook for another minute until fragrant.
  2. Stir in heavy cream, cream cheese, and chicken broth, whisking until the cream cheese is fully melted and the sauce is smooth.
  3. Add spinach, if using, and cook until wilted, then return the seared chicken to the skillet, coating it in the sauce.
  4. Transfer the chicken and sauce mixture to the prepared casserole dish and sprinkle with shredded mozzarella cheese.
  5. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.

Notes

Serve this comforting casserole hot as a standalone meal or with a side of steamed green beans or a simple salad. For an extra kick, add a pinch of red pepper flakes to the sauce.
