- In a large pot, add the chicken breasts and pour in the chicken broth.
- Bring the broth to a boil and then reduce it to a simmer. Cook the chicken for about 20 minutes or until it’s fully cooked.
- Remove the chicken from the pot and shred it using two forks.
- Add the cream cheese to the pot and stir until it melts.
- Add the shredded chicken back to the pot along with the ranch dressing mix, cooked bacon, and cheddar cheese. Mix well.
- Let the soup simmer for another 5-10 minutes until everything is heated throughout.
- Season with salt and pepper as needed.
- Serve hot, topped with green onions.
Notes
You can enjoy this soup on its own or with a side salad. For spice, add hot sauce or jalapeños. Customize by adding veggies like bell peppers or mushrooms, or use turkey instead of chicken.
