  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 package (8 oz) cream cheese Ensure it's softened for easier mixing.
  • 1 cup cooked bacon, chopped Adjust the amount based on your taste.
  • 1 packet ranch dressing mix Ensure it's gluten-free if needed.
  • 1 cup shredded cheddar cheese
  • ½ cup green onions, chopped For topping.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, add the chicken breasts and pour in the chicken broth.
  2. Bring the broth to a boil and then reduce it to a simmer. Cook the chicken for about 20 minutes or until it’s fully cooked.
  3. Remove the chicken from the pot and shred it using two forks.
  4. Add the cream cheese to the pot and stir until it melts.
  5. Add the shredded chicken back to the pot along with the ranch dressing mix, cooked bacon, and cheddar cheese. Mix well.
  6. Let the soup simmer for another 5-10 minutes until everything is heated throughout.
  7. Season with salt and pepper as needed.
  8. Serve hot, topped with green onions.

Notes

You can enjoy this soup on its own or with a side salad. For spice, add hot sauce or jalapeños. Customize by adding veggies like bell peppers or mushrooms, or use turkey instead of chicken.
