Preparation
- Preheat the oven to 400°F (200°C). Cut the cauliflower into thick slices to create 'steaks.'
- Brush the cauliflower steaks with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and pepper.
Cooking
- Place the cauliflower steaks on a baking sheet and roast in the oven for 25 minutes, flipping halfway through.
- In a skillet, heat a little olive oil over medium heat. Add the sliced bell pepper and onion, cooking until softened.
Serving
- Serve the roasted cauliflower steaks topped with the sautéed vegetables. Garnish with fresh cilantro and serve with avocado if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet until heated through.
