Ingredients

For the Slaw
  • 6 cups Kale destemmed and thinly sliced
  • 3 cups Carrots shredded
For the Dressing
  • 1/2 cup Mayonnaise
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp Honey or maple syrup
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper freshly ground

Equipment

  • Large bowl
  • Whisk
  • Grater or food processor
  • Cutting board
  • Knife

Method

Prep
  1. In a large bowl, combine the thinly sliced kale and shredded carrots. Gently massage the kale for a minute or two to tenderize it.
Dressing
  1. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and black pepper until well combined and smooth.
Combine and Serve
  1. Pour the dressing over the kale and carrot mixture. Toss everything thoroughly to ensure all the vegetables are evenly coated.
  2. Cover the bowl and refrigerate the slaw for at least 30 minutes before serving. This allows the flavors to meld and the kale to soften slightly, enhancing the overall taste and texture.

Notes

For best flavor, let the slaw chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and the kale to soften slightly.
