  • 2 pieces ripe bananas, mashed Make sure your bananas are very ripe for the best sweetness and flavor.
  • 1 cup rolled oats Feel free to use quick oats for a chewier texture.
  • 1/2 cup peanut butter or almond butter You can use any nut butter or try sun butter for a nut-free option.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan version.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or nuts (optional) You can also add dried fruits like raisins instead of chocolate chips.

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  2. In a large bowl, combine mashed bananas, oats, nut butter, honey, vanilla, baking powder, and salt. Mix until well combined.
  3. If using, fold in chocolate chips or nuts.
  4. Pour the mixture into the prepared baking dish and spread evenly.
Baking
  1. Bake for 20-25 minutes or until the edges are golden brown.
  2. Let cool, then cut into bars and enjoy!

Notes

These bars are great on their own or topped with a bit of yogurt or extra peanut butter. Store the bars in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze wrapped for up to 3 months.
