Preparation
- Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
- In a large bowl, combine mashed bananas, oats, nut butter, honey, vanilla, baking powder, and salt. Mix until well combined.
- If using, fold in chocolate chips or nuts.
- Pour the mixture into the prepared baking dish and spread evenly.
Baking
- Bake for 20-25 minutes or until the edges are golden brown.
- Let cool, then cut into bars and enjoy!
Notes
These bars are great on their own or topped with a bit of yogurt or extra peanut butter. Store the bars in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze wrapped for up to 3 months.
