Ingredients
  

For the Chicken
  • 2 medium chicken breasts
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 tbsp olive oil
For the Pasta
  • 250 g pasta
  • to taste salt
For the Sauce & Assembly
  • 1 tbsp butter
  • 0.5 medium onion finely chopped
  • 2 cloves garlic minced
  • 0.5 medium bell pepper thinly sliced (optional)
  • 0.5 cup chicken broth
  • 1 tsp cornstarch
  • 1 tbsp water for slurry
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Cook Pasta
  1. Cook the pasta according to package directions in salted boiling water until al dente. Drain and set aside, reserving about half a cup of pasta water.
Prepare and Cook Chicken
  1. Cut chicken breasts into bite-sized pieces and toss with 1 tbsp honey, soy sauce, black pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat, then cook the chicken until golden brown and cooked through, about 5-7 minutes; remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, melt butter and sauté chopped onion until softened, about 3-4 minutes. Add minced garlic and bell pepper (if using), cooking for another 2 minutes until fragrant.
  2. Pour in chicken broth and the remaining 1 tbsp honey; bring to a simmer. In a small bowl, whisk cornstarch and water to create a slurry, then gradually stir into the simmering sauce until it thickens.
Combine and Serve
  1. Return the cooked chicken and pasta to the skillet with the sauce. Toss everything together, adding a splash of reserved pasta water if the sauce is too thick.
  2. Garnish with fresh parsley before serving hot.

Notes

Adjust the amount of black pepper and honey to suit your taste preference. A dash of red pepper flakes can add a nice kick.
