  • 1 lb Carrots peeled and sliced
  • 1/4 cup Honey
  • 2 tbsp Soy Sauce low sodium
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper freshly ground
  • 1/4 cup Water
  • 2 tbsp Fresh Parsley chopped, for garnish

Method
 

Preparation & Cooking
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper to create the savory glaze.
  3. Place chicken breasts and sliced carrots on the prepared baking sheet, then drizzle about half of the honey glaze over them.
  4. Bake for 15 minutes, then flip the chicken and carrots, drizzle with the remaining glaze, and add 1/4 cup of water to the pan.
  5. Continue baking for another 10-15 minutes, or until chicken is cooked through and carrots are tender.
  6. Garnish with fresh parsley before serving this delicious dish.

Notes

For extra flavor, add a sprinkle of fresh thyme or rosemary before serving. Adjust honey to taste for desired sweetness. Ensure chicken is cooked through to an internal temperature of 165°F (74°C).
