- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper to create the savory glaze.
- Place chicken breasts and sliced carrots on the prepared baking sheet, then drizzle about half of the honey glaze over them.
- Bake for 15 minutes, then flip the chicken and carrots, drizzle with the remaining glaze, and add 1/4 cup of water to the pan.
- Continue baking for another 10-15 minutes, or until chicken is cooked through and carrots are tender.
- Garnish with fresh parsley before serving this delicious dish.
Notes
For extra flavor, add a sprinkle of fresh thyme or rosemary before serving. Adjust honey to taste for desired sweetness. Ensure chicken is cooked through to an internal temperature of 165°F (74°C).
