  • 4 pieces ripe peaches, peeled and pureed Use ripe peaches for the best flavor.
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, cut into pieces
  • 3 large eggs
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Method
 

Cooking
  1. In a saucepan, combine the peach puree, sugar, butter, eggs, lemon juice, and salt.
  2. Cook over medium heat, stirring constantly until the mixture thickens and reaches a curd-like consistency, about 10-15 minutes.
  3. Once thickened, remove from heat and strain through a fine mesh sieve into a clean jar to remove any lumps.
  4. Let cool, then refrigerate. Use as a topping or filling as needed.

Notes

Store your Homemade Peach Curd in a clean jar with a tight lid in the refrigerator. It will keep well for about a week. Make sure to label the jar with the date so you know when to use it by. You can also mix in other flavors like vanilla extract or ginger for extra depth.
