- In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, thinly sliced red onion, rinsed chickpeas, diced bell pepper, and fresh parsley.
- Pour the prepared lemon-herb dressing over the quinoa and vegetable mixture, then toss gently to ensure all ingredients are evenly coated.
- Divide the Mediterranean mixture into two serving bowls and serve immediately.
