  • 1 cup fruit puree (from your favorite fruit)
  • 4 tablespoons unflavored gelatin powder
  • 0.5 cup cold water or fruit juice
  • 2-4 tablespoons honey or maple syrup (optional)
  • 1 tablespoon lemon juice (optional)

Method
 

Preparation
  1. In a small bowl, sprinkle the gelatin powder evenly over the cold water or fruit juice, then let it sit for 5 minutes to bloom.
  2. Blend your chosen fresh fruit into a smooth puree; strain it through a fine-mesh sieve if you desire a perfectly smooth texture.
  3. Gently warm the fruit puree in a saucepan over low heat, stirring in sweetener and lemon juice, if using, until combined.
  4. Add the bloomed gelatin to the warm fruit puree, whisking continuously until it is completely dissolved without letting the mixture boil.
  5. Carefully pour the warm gummy mixture into silicone molds, filling each cavity evenly.
  6. Refrigerate the molds for at least 1 hour, or until the gummies are fully set and firm to the touch.
  7. Once firm, carefully pop the fruit snacks out of their molds and store them in an airtight container in the refrigerator.

Notes

Experiment with different fruit purees for a variety of flavors. Store gummies in an airtight container in the refrigerator for up to one week. Silicone molds are highly recommended for easy removal and cleanup.
