Make the Churro Dough
- Combine water, butter, 1/4 cup sugar, and salt in a saucepan; bring to a boil, then remove from heat.
- Stir in flour until a ball forms, then return to medium heat, stirring for 1-2 minutes until a film forms at the bottom of the pan.
- Transfer dough to a bowl, beat in eggs one at a time until fully incorporated, then mix in vanilla.
Fry the Churro Bites
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Pipe 1-inch pieces of dough into the hot oil, cutting with scissors, and fry until golden brown.
- Remove churro bites with tongs and place them on paper towels to drain excess oil.
Coat and Serve
- Mix 1/2 cup sugar and cinnamon in a small bowl, then toss the warm churro bites in the mixture.
- Warm Nutella slightly for easier dipping and serve alongside the cinnamon-sugar coated churro bites.
