Cake
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 1/2 cups Ripe mashed bananas about 3-4 large
  • 2 Large eggs
  • 1/2 cup Unsalted butter melted
  • 1 teaspoon Vanilla extract
  • 1 cup Chopped walnuts
Cream Cheese Frosting
  • 8 ounces Cream cheese softened
  • 1/2 cup Unsalted butter softened
  • 3-4 cups Powdered sugar sifted
  • 1 teaspoon Vanilla extract
  • 1-2 tablespoons Milk or heavy cream as needed

Method
 

Cake
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Whisk together flour, sugar, baking soda, salt, and cinnamon in a large bowl.
  3. In a separate bowl, combine mashed bananas, eggs, melted butter, and vanilla extract.
  4. Add wet ingredients to dry, mix until just combined, then fold in chopped walnuts.
  5. Divide batter into prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes, then invert onto a wire rack to cool completely.
Cream Cheese Frosting
  1. Beat softened cream cheese and butter with an electric mixer until light and fluffy.
  2. Gradually add sifted powdered sugar, mixing until smooth.
  3. Beat in vanilla extract, then add milk or cream until desired frosting consistency is achieved.
Assembly
  1. Once cakes are cool, place one layer on a serving plate and spread with one-third of the frosting.
  2. Place the second cake layer on top and cover the entire cake with the remaining frosting.
  3. Optionally garnish with extra chopped walnuts or banana slices before serving.

Notes

Ensure bananas are very ripe for the best flavor and moisture in the cake. Do not overmix the batter to keep the cake tender.
