  • 1 pound ground turkey
  • 6 large eggs
  • 1 cup milk Can use dairy-free alternative
  • 2 cups diced potatoes You may substitute with sweet potatoes
  • 1 cup shredded cheese Cheddar or your choice
  • 1 cup diced bell peppers Any color bell pepper works
  • 1 cup diced onions
  • Salt and pepper To taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs Such as oregano or thyme

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned. Drain excess fat.
  3. In a large bowl, beat the eggs with milk, salt, pepper, garlic powder, and dried herbs.
  4. Add the cooked turkey, diced potatoes, bell peppers, onions, and cheese to the egg mixture. Stir well to combine.
  5. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 35-40 minutes, or until the eggs are set and the top is lightly golden.
  2. Let it cool for a few minutes before slicing and serving.

Notes

You can prep the casserole the night before and bake it in the morning. Add other vegetables like spinach or mushrooms for extra nutrition. Adjust seasoning to taste - add diced jalapeños for spice. It can be stored in an airtight container for 3-4 days in the fridge or frozen for later.
