  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste salt
  • to taste pepper

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened.
  2. Add the ground beef to the pot and cook until browned. Drain any excess fat.
Cooking
  1. Stir in the kidney beans, black beans, diced tomatoes, corn, beef broth, chili powder, cumin, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat and simmer for about 20-30 minutes, stirring occasionally.
  3. Adjust seasonings as needed and serve warm. Enjoy!
