Ingredients
  

Meat
  • 1 lb beef stew meat Use a mix of beef cuts for extra flavor.
  • 1 lb smoked sausage, sliced Can substitute with chicken or turkey sausage for a lighter option.
Vegetables
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 3 cloves garlic, minced
Liquids and Flavorings
  • 4 cups beef broth Can substitute with vegetable broth for a vegetarian version.
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste Salt and pepper Adjust seasoning as needed.
  • 1 tablespoon olive oil For browning the meat.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Add the chopped onion, carrots, and garlic, cooking until softened.
  4. Stir in the smoked sausage and cook for another few minutes.
Cooking
  1. Add the diced potatoes, beef broth, tomato paste, thyme, paprika, salt, and pepper.
  2. Bring to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
Serving
  1. Adjust seasoning as needed and serve hot.
  2. You can add a sprinkle of fresh parsley for color and flavor.

Notes

For a thicker stew, let it simmer uncovered for the last half hour to reduce the liquid. Serve with crusty bread or rice to soak up the broth.
