Preparation
- Preheat your oven to 350°F (175°C) and line an 8.5x4.5 inch loaf pan with parchment paper, leaving an overhang on the sides.
- In a blender or food processor, combine the cottage cheese and eggs; blend until completely smooth and creamy.
Mixing and Baking
- In a large bowl, whisk together the almond flour, baking powder, salt, and garlic powder (if using).
- Pour the wet cottage cheese mixture into the dry ingredients and mix until just combined, ensuring no dry streaks remain.
- Transfer the batter into the prepared loaf pan, spreading it evenly, and sprinkle with optional everything bagel seasoning.
- Bake for 40-50 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
- Allow the bread to cool in the pan for at least 15 minutes before using the parchment paper overhang to lift it out.
- Transfer to a wire rack to cool completely before slicing and serving.
Notes
For best results, make sure your cottage cheese is thoroughly blended for a smoother bread texture. This bread is excellent toasted or as a base for open-faced sandwiches.
