  • 3 large eggs
  • 1 cup almond flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder optional
Toppings (Optional)
  • 1 tablespoon everything bagel seasoning for sprinkling

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8.5x4.5 inch loaf pan with parchment paper, leaving an overhang on the sides.
  2. In a blender or food processor, combine the cottage cheese and eggs; blend until completely smooth and creamy.
Mixing and Baking
  1. In a large bowl, whisk together the almond flour, baking powder, salt, and garlic powder (if using).
  2. Pour the wet cottage cheese mixture into the dry ingredients and mix until just combined, ensuring no dry streaks remain.
  3. Transfer the batter into the prepared loaf pan, spreading it evenly, and sprinkle with optional everything bagel seasoning.
  4. Bake for 40-50 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the bread to cool in the pan for at least 15 minutes before using the parchment paper overhang to lift it out.
  2. Transfer to a wire rack to cool completely before slicing and serving.
