  • 1 cup Peanut Butter (natural, unsweetened)
  • 1/2 cup Maple Syrup (or other liquid sweetener)
  • 1 large Egg
  • 1 cup Oat Flour (or almond flour)
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Method
 

Preparation
  1. In a large mixing bowl, combine the peanut butter, maple syrup, egg, and vanilla extract until smooth.
  2. Add the oat flour, baking soda, and salt to the wet ingredients and mix until just combined, being careful not to overmix.
Baking
  1. Roll the dough into 1-inch balls and place them on a prepared baking sheet. Gently press each cookie with a fork to create a criss-cross pattern.
  2. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Do not overbake these cookies to keep them soft and chewy. They will firm up as they cool. Store in an airtight container at room temperature.
