Preparation
  1. Preheat your oven to 350°F (177°C) to create the perfect baking temperature.
  2. In a large bowl, combine the mashed bananas with unsweetened applesauce until smooth and well blended.
  3. Stir in the vanilla extract and ground cinnamon.
  4. Gently fold in the oats until completely mixed.
  5. Add the almond milk for moisture, then incorporate the optional raisins or nuts and dark chocolate chunks.
  6. Line a baking sheet with parchment paper or lightly grease it.
  7. Drop cookie portions onto the baking sheet, flattening them slightly.
  8. Place in the oven and bake for 15-20 minutes until firm and lightly golden brown.
  9. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them, separating each with parchment paper.
