  • 1 pound ground turkey
  • 1 can white beans drained and rinsed
  • 2 cups kale, chopped stems removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sautéing until translucent.
  3. Add ground turkey, cooking until browned.
  4. Stir in the white beans, kale, broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Serve warm and enjoy!

Notes

Serve this soup warm in bowls. Great on its own or with crusty bread. For added flavor, sprinkle with grated Parmesan cheese. Store leftovers in an airtight container for up to three days in the fridge or freeze for three months. Thaw overnight before reheating.
