Ingredients
  

Main Ingredients
  • 1 lb ground turkey
  • 1 cup bell peppers, chopped Use any color of bell pepper.
  • 1 cup onion, chopped
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice) Feel free to substitute with your favorite cheese.
  • to taste Salt and pepper Adjust according to your taste.
  • 4 large tortillas
  • 1 tbsp Olive oil for cooking Can use other cooking oils instead.

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat.
  2. Add chopped onions and bell peppers, and sauté until soft.
  3. Add ground turkey to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through. Season with salt and pepper.
  4. In a bowl, whisk the eggs, then scramble them in a separate pan.
  5. Once the turkey mixture is done, add the scrambled eggs and cheese, mixing well.
  6. Warm the tortillas.
  7. Spoon the turkey and egg mixture onto each tortilla, roll them up, and serve warm.

Notes

These burritos are best enjoyed warm and can be served with salsa, avocado, or sour cream. They also make a great grab-and-go breakfast. Leftovers can be stored in the refrigerator for up to 3 days or frozen for about a month. Use fresh vegetables for the best flavor and adjust seasoning as per your preference.
