  • 1 lb ground turkey
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 large tortillas
  • Sour cream or salsa (optional for serving)

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground turkey until browned and cooked through.
  2. Add the diced bell peppers, onion, garlic powder, chili powder, salt, and pepper. Cook until the vegetables are tender.
  3. In a bowl, whisk the eggs and then pour over the turkey mixture. Scramble until the eggs are fully cooked.
  4. Place a portion of the turkey and egg mixture onto each tortilla, sprinkle with cheese, and roll them up.
  5. Serve with sour cream or salsa if desired.

Notes

For storage, wrap tightly in plastic wrap or aluminum foil, and store in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage; just thaw before reheating.
