Ingredients
  

For the salad
  • 1 pound shrimp, peeled and deveined Make sure the shrimp are fully thawed before grilling.
  • 2 tablespoons olive oil
  • Salt and pepper to taste Salt and pepper
  • 1 head romaine lettuce, chopped
  • 1/2 cup Caesar dressing Store dressing separately for leftovers.
  • 1/4 cup grated Parmesan cheese
  • Croutons (optional) Ensure gluten-free if necessary.
  • Lemon wedges (for serving)

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Toss the shrimp with olive oil, salt, and pepper.
Cooking
  1. Grill the shrimp for about 2-3 minutes on each side until cooked through.
Assembly
  1. In a large bowl, combine the chopped romaine lettuce and Caesar dressing, tossing to coat.
  2. Add the grilled shrimp on top of the salad.
  3. Sprinkle with Parmesan cheese and croutons if desired.
  4. Serve with lemon wedges on the side.

Notes

For a more complete meal, add crusty bread on the side. You can customize the salad by adding different vegetables like cherry tomatoes or avocado, or swap shrimp with grilled chicken or tofu for a different flavor.
