Grilled Marinated Chicken with Tomato and Cucumber Salad

Ingredients
  

Chicken Marinade
  • 2 lbs Chicken Breasts
  • 1/4 cup Olive oil
  • 2 tbsp Lemon Juice
  • 2 cloves Minced Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Tomato and Cucumber Salad
  • 2 large Tomatoes diced
  • 1 large Cucumbers diced
  • 1/4 cup Red Onion finely sliced
  • 2 tbsp Fresh Parsley chopped
  • 2 tbsp Olive oil
  • 1 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Method
 

Chicken
  1. In a large bowl, combine chicken breasts with olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Marinate for at least 30 minutes in the refrigerator, or up to 4 hours for best flavor.
  2. Preheat your grill to medium-high heat. Grill the marinated chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
Salad
  1. While the chicken marinates or grills, prepare the salad. In another bowl, combine diced tomatoes, cucumbers, finely sliced red onion, and chopped fresh parsley. Dress with olive oil, lemon juice, salt, and black pepper, then toss gently to combine.
Serving
  1. Once the chicken is cooked, let it rest for a few minutes before slicing. Serve the sliced grilled chicken alongside the fresh tomato and cucumber salad.

Notes

For best results, marinate the chicken for at least 30 minutes, or even overnight. Adjust seasoning to your taste.
