Ingredients
  

For the marinade
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 limes Juice of 2 limes Freshly squeezed
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
For the skewers
  • 1 pound shrimp, peeled and deveined
  • Skewers If using wooden skewers, soak in water for 30 minutes

Method
 

Marinating
  1. In a large bowl, combine cilantro, olive oil, lime juice, garlic, cumin, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate for at least 15 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated shrimp onto the skewers.
  3. Grill the shrimp for 2-3 minutes on each side or until they turn pink and opaque.
  4. Remove from the grill and serve immediately, garnished with lime wedges and additional cilantro if desired.

Notes

Serve these skewers as a standalone dish, with rice, a fresh salad, or warm tortillas. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat carefully to maintain texture.
