- Cook orzo according to package directions until al dente, then drain and rinse with cold water to stop cooking.
- Combine halved cherry tomatoes, pitted Kalamata olives, chopped fresh basil, crumbled feta cheese, extra virgin olive oil, minced garlic, and fresh lemon juice in a large bowl.
- Add the cooled orzo to the bowl with the other ingredients, then toss gently to combine and season with salt and freshly ground black pepper to taste before serving.
Notes
This dish can be served warm or cold. For best flavor, allow it to sit for at least 15 minutes before serving for the flavors to meld. Add grilled chicken or shrimp for a more substantial meal.
