Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion and garlic, and sauté until fragrant.
  4. Add ground turkey and cook until browned.
  5. Stir in sweet potato, zucchini, bell pepper, diced tomatoes, smoked paprika, Italian seasoning, salt, and pepper.
  6. Cook for about 10-15 minutes until vegetables are tender.
Baking
  1. Transfer the mixture to a baking dish and spread evenly.
  2. Bake in the oven for 25-30 minutes until the sweet potato is fully cooked.
  3. Let cool for a few minutes before serving.

Notes

Serve warm with green salad or whole grain bread. For added flavor, a sprinkle of fresh herbs or cheese can enhance the dish. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 3 months. Allow to thaw in the fridge before reheating.
