Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic, and sauté until fragrant.
- Add ground turkey and cook until browned.
- Stir in sweet potato, zucchini, bell pepper, diced tomatoes, smoked paprika, Italian seasoning, salt, and pepper.
- Cook for about 10-15 minutes until vegetables are tender.
Baking
- Transfer the mixture to a baking dish and spread evenly.
- Bake in the oven for 25-30 minutes until the sweet potato is fully cooked.
- Let cool for a few minutes before serving.
Notes
Serve warm with green salad or whole grain bread. For added flavor, a sprinkle of fresh herbs or cheese can enhance the dish. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 3 months. Allow to thaw in the fridge before reheating.
