Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, melted coconut oil, honey (or maple syrup), and vanilla extract; mix well.
  4. In another bowl, combine the gluten free flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  3. Let cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.

Notes

Gluten Free Banana Bread pairs well with coffee or tea and can be served warm with butter or honey. For added texture, mix in nuts or chocolate chips. Store tightly wrapped at room temperature for up to 3 days or freeze for 2-3 months.
