Ingredients

  • 2 envelopes Unflavored gelatin
  • 1/2 cup Cold water
  • 1 1/2 cups Boiling water
  • 1/2 cup Granulated sugar
  • 2 inches Fresh ginger peeled and thinly sliced
  • 1 tablespoon Lemon juice

  • Fine-mesh strainer
  • Serving dishes or loaf pan

Method
 

Preparation
  1. In a medium bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine boiling water, sugar, and sliced ginger. Stir until sugar dissolves, then remove from heat.
  3. Strain the ginger syrup into the bloomed gelatin mixture, pressing the ginger to extract flavor. Stir until gelatin is fully dissolved.
  4. Stir in the lemon juice. Pour the mixture into individual serving dishes or a 9x5 inch loaf pan.
  5. Refrigerate for at least 4 hours, or until the jello is set. Serve chilled.

Notes

For a stronger ginger flavor, steep the ginger slices in the hot water for an extra 10-15 minutes before straining. Garnish with fresh mint or whipped cream if desired.
