Preparation
- In a medium bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- In a saucepan, combine boiling water, sugar, and sliced ginger. Stir until sugar dissolves, then remove from heat.
- Strain the ginger syrup into the bloomed gelatin mixture, pressing the ginger to extract flavor. Stir until gelatin is fully dissolved.
- Stir in the lemon juice. Pour the mixture into individual serving dishes or a 9x5 inch loaf pan.
- Refrigerate for at least 4 hours, or until the jello is set. Serve chilled.
Notes
For a stronger ginger flavor, steep the ginger slices in the hot water for an extra 10-15 minutes before straining. Garnish with fresh mint or whipped cream if desired.
