Preparation
  1. In a large bowl, combine the olive oil, minced garlic, Parmesan cheese, oregano, thyme, salt, and pepper.
  2. Coat the chicken breasts in the mixture, making sure they are well covered.
Cooking
  1. Place the halved baby potatoes in the bottom of a crockpot and lay the seasoned chicken on top of the potatoes.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  3. Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in the garlic and seasoning mixture overnight. You can substitute different herbs or spices to suit your taste. If you want crispy edges on the chicken, you can broil it for a few minutes after cooking. Consider adding vegetables, like carrots or green beans, for more nutrition. You can also add red pepper flakes for a touch of heat or a sprinkle of fresh lemon juice before serving for a refreshing twist.
