Preparation
- Lightly grease a 9x13 inch baking dish and set aside. In a large mixing bowl, combine the popped popcorn and salt, if using.
- In a large saucepan over medium-low heat, melt the butter. Add the marshmallows and stir constantly until completely melted and smooth; then remove from heat and stir in the vanilla extract.
- Pour the melted marshmallow mixture over the popcorn in the large bowl. Add 1/2 cup of funfetti sprinkles and mix gently with a greased spatula until the popcorn is evenly coated.
- Transfer the mixture to the prepared baking dish. Using a greased spatula or your greased hands, press the mixture firmly and evenly into the dish. Top with additional sprinkles, if desired, and let cool completely before cutting into squares.
Notes
For best results, use fresh popcorn and press the mixture firmly into the dish. Lightly grease your hands or the spatula with butter or cooking spray to prevent sticking when pressing the treats.
