Brownie Base
  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup crushed peppermint bits Or crushed candy canes
  • 1/2 cup chocolate chips Optional
For Dusting
  • Powdered sugar Powdered sugar for dusting Optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. Melt the butter in a saucepan over medium heat. Remove from heat and stir in the sugar, eggs, and vanilla.
  3. Beat in the flour, cocoa, and salt until combined.
  4. Fold in the crushed peppermint bits and chocolate chips, if using.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
Serving
  1. Allow to cool, then cut into squares and dust with powdered sugar if desired.
  2. Serve warm or at room temperature with vanilla ice cream or whipped cream.

Notes

Make sure to melt the butter gently to avoid burning it. Do not overmix the batter once you add the flour to keep brownies fudgy. Test for doneness by checking for moist crumbs on the toothpick.
