Preparation
- Combine Greek yogurt, peanut butter, honey/maple syrup, and vanilla extract in a medium bowl until smooth. Fold in optional mini chocolate chips.
- Line a baking sheet with parchment paper. Drop spoonfuls of the mixture onto the prepared sheet, forming small bites.
- Place the baking sheet in the freezer for at least 1-2 hours, or until the bites are firm.
- Transfer the frozen bites to an airtight container and store them in the freezer for up to 2 weeks.
Notes
For best results, use a firm Greek yogurt. You can also drizzle with melted chocolate before freezing for an extra treat.
