Ingredients

Clusters
  • 1 cup Greek yogurt, plain
  • 1 cup Strawberries, fresh, chopped
  • 1-2 tbsp Honey or maple syrup optional
Chocolate Coating
  • 1 cup Chocolate chips or bar dark or semi-sweet
  • 1 tsp Coconut oil optional, for thinning chocolate

Equipment

  • Mixing Bowl
  • Spoon/Spatula
  • Baking sheet
  • Parchment paper

Method

Preparation
  1. Wash and hull the strawberries, then chop them into small pieces.
  2. In a medium bowl, combine the Greek yogurt, chopped strawberries, and optional sweetener until well mixed.
  3. Line a baking sheet with parchment paper. Spoon small clusters of the yogurt mixture onto the parchment paper, leaving space between each.
Freezing & Coating
  1. Place the baking sheet in the freezer for at least 1-2 hours, or until the yogurt clusters are solid.
  2. Once clusters are frozen, melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl or double boiler until smooth.
  3. Dip each frozen yogurt cluster into the melted chocolate, allowing any excess to drip off. Place them back on the parchment-lined baking sheet.
  4. Return the chocolate-coated clusters to the freezer for another 15-30 minutes, or until the chocolate has set. Store in an airtight container in the freezer.

Notes

For best results, use good quality chocolate for melting. You can also sprinkle with sea salt before the final freeze for an extra flavor boost.
