Ingredients
  

For the Crust
  • 8 oz graham cracker crumbs
  • ½ cup unsalted butter, melted
For the Filling
  • 10 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 ½ tbsp light brown sugar
  • 1 tsp vanilla extract
For the Topping
  • 1 lb fresh apricot, plus 3 apricots for decoration
  • 2 slices lemon
  • 2 pods cardamom

Method
 

Preparation
  1. In a blender, combine graham cracker crumbs and melted butter until evenly mixed.
  2. Press the mixture firmly into a tart pan to form the crust.
  3. In a small saucepan, cook peeled apricots, brown sugar, cardamom, and lemon over medium heat until apricots soften (about 15 minutes). Stir often. Add 2 tbsp of water if needed.
  4. Let the apricot mixture cool, then blend until smooth.
  5. In a bowl, beat cream cheese, heavy cream, powdered sugar, and vanilla until soft peaks form.
Assembly
  1. Spread the cream cheese mixture over the crust.
  2. Add the apricot topping to the center, leaving a 2-inch gap around the edges.
  3. Slice the remaining apricots and decorate on top.
  4. Chill for at least 3–4 hours or overnight for best results.

Notes

Make sure to use ripe apricots for the best flavor. You can adjust the sugar amount based on the sweetness of your apricots. Chill overnight for a firmer texture.
