  • 1 cup mixed vegetables (e.g., bell peppers, spinach, onions) Can use any vegetables on hand
  • 1 cup shredded cheese (e.g., cheddar, mozzarella) Can use any cheese on hand
  • 1 tablespoon olive oil For cooking the frittata
  • Salt and pepper to taste

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs and milk.
  3. Stir in the mixed vegetables and cheese. Season with salt and pepper.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium heat.
  2. Pour the egg mixture into the skillet and stir gently to combine.
  3. Cook for a few minutes until the edges start to set, then transfer the skillet to the preheated oven.
  4. Bake for 20-25 minutes, or until the frittata is fully set and lightly golden.
  5. Let it cool slightly before slicing and serving.

Notes

Serve warm, cut into wedges. Pairs well with a fresh salad or crusty bread. Can add salsa or hot sauce for extra flavor. Store leftovers in an airtight container for up to 3-4 days or freeze for later use. Avoid overmixing to keep the frittata fluffy.
